Not Just Another Pizzeria, We Are ‘Pizza Masters’

Pizza is serious business in Jersey City Heights.  Ask any local, and they will gladly tell you about their favorite pizzeria.  One of the oldest and best pizzerias in town is Pizza Masters on Central Ave.  I caught up with Lorenzo DeMarchi of Pizza Masters at the opening of their restaurant expansion to find out what makes their pizza so great.

What is your favorite pizza topping?

 

Lorenzo DeMarchi (Pizza Masters):

 

That's tough question because I eat a slice every day.  I think my favorite topping is probably anchovies.  I can put anchovies on anything and it will make it taste better.  I can even eat anchovies plain, I love the saltiness and the oiliness.

From your current menu what is your favorite dish? 

 

Lorenzo DeMarchi (Pizza Masters):

 

I would say probably the chicken caesar salad, but I like mine with a chicken cutlet.  The combination of fried chicken with a lot of lettuce, topped with our house made Caesar dressing is basically comfort food at its best when I'm working here.

Is Pizza Masters known for any signature dishes?

 

Lorenzo DeMarchi (Pizza Masters):

 

One customer favorite is Chicken Italiano.  The customers like the way we prepare our chicken. We don't pound the chicken as much so it's a much thicker portion.  Our signature dish, if you asked my father he would say the Penne con Pollo, which is penne with strips of chicken breast, sun-dried tomatoes, mushrooms, rosemary, and onions. He went to Italy and was inspired by the locals to create this dish.  This is his take on a version of traditional hearty Northern Italian cuisine.

How is your family's business connected to your local area?

My father has been here in Jersey City since the early 1960’s. Before that he was in Hoboken, so basically forever. He knows everyone just from running his own business for almost 50 years.  You get to know everyone and what they like to eat, so you become part of the community.

What's new with Pizza Master this year?

 

Lorenzo DeMarchi (Pizza Masters):

 

Our expansion started early last year, we were hoping for a May or June opening but we pushed it back till September.  A lot of effort and planning has gone into our restaurant expansion.  We had the opportunity and the capital to get the building next door, so we went for it.  We have been planning on this expansion for a really long time.  In this business, you grow or you die.

What is the biggest challenge you had to overcome this past year?

 

Lorenzo DeMarchi (Pizza Masters):

 

The hardest thing for us has been adapting to the new social climate of gentrification in Jersey City. For the longest time when people wanted pizza, they went to a pizzeria.  You know we can't just be a place that slings slices any more.  With our old school food traditions, we knew we had to grow with the neighborhood.  Now you can see we offer a wide variety of pizzas.  We’re not just another pizzeria, we are Pizza Masters.

How do you use social media to promote your brand?

 

Lorenzo DeMarchi (Pizza Masters): 

 

I recently started using social media at the urging of a friend in marketing.  It’s become an integral part of our business now.  We started a campaign to promote awareness of our new restaurant expansion through our Facebook and Instagram channels.  I really like the way that I can reach out to the neighborhood every day.  I can find out what everybody is doing and what's happening.

I want to thank my father and my brother who brought me into the business.  At first, I was just a manager, but now I have more responsibility with the expansion.  They really gave me the freedom to start making owner level decisions.  They are both very pleased that I have grown into this role.
